Buffalo Meatball Flatbread
with Buffalo Wing Sauce

- Meatballs:
- 1 pound ground chicken
- 1 garlic clove
- 1 egg
- 2 tbsp parsley, chopped
- 1 tsp oregano, chopped
- 3/4 cup breadcrumbs
- 1/2 cup cheddar, grated
- 2 tbsp Sweet Baby Ray’s Hot Sauce
- 1/4 cup Sweet Baby Rays Buffalo Wing Sauce
- Flatbread:
- Store-bought pizza dough
- 1/2 cup Sweet Baby Ray’s Buffalo Wing Sauce
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 1 cup mozzarella, grated
- 1/4 cup ranch dressing
- 1 tbsp fresh oregano
Instructions
- Makes 2 flatbreads with leftover meatballs.
- Mix the meatball ingredients in a large bowl, except for the Sweet Baby Ray's Buffalo Wing Sauce. Season with salt and pepper.
- Heat broiler to high.
- Lightly grease a baking sheet.
- Form the meatballs and put them onto the baking sheet.
- Broil on high for 3-5 minutes until browned, then flip the meatballs and repeat.
- Toss the meatballs with the Buffalo Wing Sauce and set aside. Cut into eighths once cooled.
- Heat grill.
- Split the store-bought pizza dough in half and roll out to a long, thin shape.
- Lightly coat the entire dough in oil.
- Grill the flatbread on high for 3 minutes to brown, then lower heat and flip.
- Evenly brush the Buffalo Wing Sauce on the two flatbreads. Top with the veggies, enough meatballs for your personal preference, and the cheese. Close the grill and cook until melted.
