SBR Chipotle Chicken Tacos
with Honey Chipotle Barbecue Sauce

- 6 boneless skinless chicken thighs
- 2 portobello mushrooms (for a vegetarian option)
- 1 package of small flour or corn tortillas
- Optional toppings: pickled jalapeños, red onion, guacamole, roasted corn
- For the marinade:
- 1/2 cup Sweet Baby Ray's Honey Chipotle Barbecue Sauce
- 1/2 cup Italian dressing
- 3 tbsp wet jerk seasoning
- 2 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- For the sauce:
- 1/2 cup sour cream
- 1 lime, juiced
- 1 lemon, juiced
- 2 tsp kosher salt
- 1 tbsp cracked black pepper
- 2 tbsp fresh cilantro
- 1 tbsp horseradish
- For the tacos:
- 1 cup shredded purple cabbage
- 1 package cheddar jack cheese
- 1 jar of your favorite salsa
- 2 sliced avocados
- lemons and limes, sliced
- fresh cilantro leaves
Instructions
- Marinate the chicken and portobello mushrooms (marinate them separately for a vegetarian option) for at least one hour or overnight.
- Grill until just cooked through.
- Cut the chicken into slices.
- Pack everything up for the perfect tailgate feast.
- Build your tacos, add the tangy sauce, and include whatever other toppings you may like. Enjoy!
