BBQ Chop Chicken Salad
with Honey Chipotle Barbecue Sauce

- 1-2 pounds chicken thighs
- 1 packet of Zesty Italian dressing mix
- 2 tbsp olive oil
- 2 heads of romaine, chopped
- 1/2 red onion, thinly sliced
- 1 orange bell pepper, chopped
- 2-3 roma tomatoes, chopped
- 1/4 cup green onion, chopped
- 1/2 cup cilantro, chopped
- 1 large avocado, cut into cubes
- 2 ears of corn
- 3 tbsp lime juice
- 1/2 bottle of Sweet Baby Ray's Honey Chipotle BBQ Sauce
- 1/2 cup ranch dressing
- Optional:
- 1/2 jicama
- 1 cucumber
- 1/2 can black beans
- tortilla strips
Instructions
- Boil a large pot of water and cook the corn while prepping the veggies. Also, place raw chicken in a bag with Zesty Italian mix and oil, and set in the fridge to marinade.
- Chop all veggies and add to a large salad bowl.
- Grill chicken until cooked through and set aside covered in tin foil to rest for at least 5 minutes before cutting.
- Char the corn on the grill for just a few minutes per side and remove. Carefully cut the corn from the cob and set aside to cool slightly.
- Chop the chicken and toss with Sweet Baby Ray's until well coated. Add to salad along with corn. Sprinkle the lime juice and toss together.
- In a small bowl, combine 1/2 cup ranch dressing and 1/2 cup Sweet Baby Ray's Honey Chipotle to make the dressing and serve over the top.
