Honey Chipotle Country Style Rib Sandwich
with Honey Chipotle Barbecue Sauce

- 2 pounds boneless country style pork ribs
- 1 small sweet Vidalia onion sliced
- 2 cups Sweet Baby Ray’s Honey Chipotle BBQ Sauce
- 4 tbsp salted butter cut into cubes
- 1/4 cup apple cider vinegar
- 2 tbsp honey
- 8 toasted hoagie buns
- Hey Grill Hey’s Sweet BBQ Rub
- 1/4 cup dark brown sugar
- 1 tbsp coarse sea salt
- 2 tsp cracked black pepper
- 2 tsp smoked paprika (hot or mild, whichever you prefer)
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp ground mustard
- 1/2 tsp cayenne pepper
Instructions
- Liberally season the ribs on all sides with the Sweet BBQ Rub. To make the rub,
- combine all of the ingredients for the rub in a small bowl. Stir well to combine and store in an airtight container. (The spice mix will last in your cupboard for up to a month.)
- Preheat your grill to 350 degrees F with two zone heat. Place the seasoned ribs on the side of the grill with the direct heat.
- Transfer the seared ribs to a 9x13 aluminum pan, top with the sliced sweet onions, Sweet Baby Ray's Honey Chipotle BBQ sauce, apple cider vinegar, honey, and butter. Cover with foil and return to the grill on the indirect heat side.
- Bake, covered, for 2-3 additional hours or until the ribs are 202 degrees F internal temperature.
- Allow them to rest in the pan for 20-30 minutes. Carefully transfer one rib to each toasted bun.
- Top with the caramelized onions and additional sauce as desired. Serve immediately and enjoy.
