BBQ Chicken Taquitos
with Honey Chipotle Barbecue Sauce
time: 15-30 minutes | serves: 4
Ingredients
- 3 cups cooked and diced chicken (5 or 6 thinly sliced chicken breasts)
- 2 to 2 1/2 cups shredded cheese
- 1 bottle of Sweet Baby Ray's Honey Chipotle Barbecue Sauce
- 10 flour tortillas, 6 inch
- Salt
- Pepper
- Seasoning Salt
Instructions
- Preheat oven to 350 degrees. Place chicken in a casserole dish and sprinkle with salt, pepper, and a small amount of seasoning salt. Wrap in foil.
- Bake until cooked through and juices run clear. Mine cooked for about 30 minutes. Unwrap and bake for 5 minutes.
- Once chicken has cooled, begin dicing it into small pieces. Place in a bowl and pour BBQ sauce over and stir to evenly coat.
- Warm tortillas in the oven for 2-3 minutes.
- Increase oven temperature to 425 degrees.
- Place a thin layer of chicken down the center of the shell. Sprinkle with cheese. Wrap tightly. Begin by folding one side over to create a seam between the two sides, then roll up the meaty part until it reaches the end. Place seam side down in a casserole dish. Once all tortillas have been filled, brush with melted butter.
- Bake at 425 degrees for 18-20 minutes or until golden brown.
