BBQ Black Bean Quesadillas
with Original Barbecue Sauce
time: 15-30 minutes | serves: 4
Ingredients
- 1 cup Sweet Baby Ray’s Original Barbecue Sauce
- 1/2 cup salsa
- 16 oz. black beans
- 2/3 cup sour cream
- 1 tbsp chili powder
- 8 small flour tortillas
- 3 cups shredded Monterey Jack cheese
- Original Barbecue Sauce BBQ (undefined)
Instructions
- In a small bowl, mix 1/2 cup Sweet Baby Ray's Barbecue Sauce and the salsa, set aside.
- Combine beans, remaining 1/2 cups Sweet Baby Ray's Barbecue Sauce and sour cream in a medium bowl. Stir with a fork, mashing the beans against the side if the bowl (mixture will be lumpy). Stir in chili powder.
- Place 1 tortilla in a nonstick skillet.
- Spread with about 1/4 cup of the bean mixture, starting at the center and leaving a 3/4-inch edge. Sprinkle with cheese. Top with another tortilla.
- Cook over medium/high heat until light brown.
- Flip the quesadilla and cook until the cheese is melted.
- Serve with the salsa mixture.
