Barbecue Tater Tot Casserole
with Original Barbecue Sauce

- 1 medium sweet onion, chopped
- Olive oil
- 2 pounds lean ground beef
- 1 tsp garlic salt
- 1 tsp pepper
- 1 tsp chili powder
- 2 cups Sweet Baby Ray’s Original Barbecue Sauce
- 1 cup frozen corn
- 15 ounces pinto beans, drained
- 2 cups cheddar cheese
- 28-ounce bag frozen Tater Tots
- Sweet Baby Ray's Original Barbecue Sauce
Instructions
- Preheat oven to 400 degrees F.
- Prepare a 9x13 baking dish with cooking spray and set aside.
- Heat olive oil in a large skillet over medium-high heat. Cook onion until translucent, then add the ground beef, chili powder, garlic salt, and pepper. Stir and cook until the meat is almost cooked through. Add one cup of Sweet Baby Ray’s Original Barbecue Sauce to the meat mixture.
- Stir in corn and drained beans and cook until heated through and hot.
- Pour the meat mixture into the prepared baking dish. Layer the remaining cup of Sweet Baby Ray’s Original Barbecue Sauce over the meat and top with cheddar cheese.
- Arrange Tater Tots in an even layer over the top of the cheese.
- Bake uncovered for 30-40 minutes until Tater Tots are golden brown or as crispy as desired.
