Stuffed Spicy BBQ Cheeseburger
with Sweet 'n Spicy Barbecue Sauce

- 1 cup Sweet Baby Ray's Sweet & Spicy BBQ Sauce
- 2 pounds ground beef, lean 90/10 (80/20 will work fine as well)
- 4 oz. pepper jack cheese, shredded
- 4 oz. mozzarella cheese, shredded
- 1/4 cup jalapeño, pickled, chopped
- 4 brioche buns, split, toasted
- 4 iceberg lettuce leaves
- 4 tomatoes, large, sliced
- 4 bacon strips, cooked
Instructions
- Form 8 4-oz. burger patties, approximately 5 - 6 inches round and thin.
- Mix the pepper jack and mozzarella cheeses with the chopped jalapeño and divide into 4 equal portions.
- Stuff one of the portions of cheese and jalapeño between two 4-oz. burger patties, making sure you pinch the edges tightly so the cheese will not escape when cooking. Form into nicely rounded burgers.
- Grill for 4 - 6 minutes on each side or until your desired level of doneness.
- To build the burger, spread BBQ sauce on both sides of the toasted brioche bun.
- On the bottom bun, place the lettuce topped with the sliced tomato, then the grilled burger.
- Place the bacon on top of the burger, followed by the top bun.
- Serve and enjoy.
