Hawaiian BBQ Mahi-mahi Tacos
with Hawaiian Barbecue Sauce

- 1 ½ pounds mahi-mahi cut into 4 pieces
- 1 tbsp extra virgin olive oil
- 4 tortillas
- Lime for garnish
- Rub Mix
- 1 tbsp paprika
- ¼ teaspoon cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp kosher salt
- ½ teaspoon ground black pepper to taste

BBQ Pineapple Salsa - 2 cups fresh pineapple, diced
- ¾ cup red onion, chopped
- ¼ cup cilantro
- ¼ cup Sweet Baby Ray’s Hawaiian Barbecue Sauce
- ¾ teaspoon ground cumin
- ½ teaspoon salt
Instructions
- Combine the salsa ingredients into one bowl and mix to combine, then place into a refrigerator to chill until ready to use.
- Rub the spice mix into the fish on both sides.
- On a medium high grill, prepare the grates with oil.
- Grill the fish for about 5 minutes per side, or until cooked through. Once cooked, use a fork to coarsely shred the fish.
- To prepare, fill tortillas with fish cabbage and pineapple salsa. Serve with lime and your favorite taco toppings.
