Honey Barbecue Shredded Chicken Sandwiches
with Honey Barbecue Sauce

- 4 chicken breasts
- 2 tbsp extra-virgin olive oil
- 2 tbsp Jamaican jerk seasoning
- 1/2 cup Sweet Baby Ray’s Honey Barbecue Sauce
Instructions
- Rinse and pat dry the chicken breasts, then place them in a medium bowl.
- Brush chicken breasts with extra virgin olive oil.
- Scatter 2 tablespoons of Jamaican jerk seasoning on chicken and coat evenly.
- Allow the chicken to marinate for 15 minutes.
- Add 2 tablespoons of extra virgin olive oil to a pressure cooker.
- When the oil is hot, add the chicken breasts to the pressure cooker, then place on the lid and lock.
- On the pressure cooker, set the timer to 12 minutes and make sure the venting knob is in the correct position.
- Allow the chicken to cook on high pressure.
- When the time has expired, vent the steam and unlock the lid.
- Pour out any excess juices, then use two forks to shred the chicken breasts.
- Add 1/2 cup Sweet Baby Ray's Honey Barbecue Sauce.
- Thoroughly mix the barbecue sauce into the meat.
- Serve with aged sharp cheddar cheese on toasted sesame buns.
