Pulled Pork Al Pastor Tacos

with Sweet Baby Ray’s Smoked Chipotle Hot Sauce

Ingredients
  • 1 cup Sweet Baby Ray’s Smoked Chipotle
  • 1/2 cup pineapple juice
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 lbs pork shoulder, halved
  • 1 red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 12 corn tortillas, warmed according to package directions (5 inches)
  • 2 cups diced pineapple
  • 2 avocados, peeled, halved, pitted and thinly sliced
  • 1/2 cup packed fresh cilantro leaves
  • 1/4 cup Sweet Baby Ray’s Smoked Chipotle
  • Lime wedges, for serving

Instructions
  • Smoked Chipotle Pulled Pork: In bowl of slow cooker, stir together 1 cup Sweet Baby Ray’s Smoked Chipotle, pineapple juice, lime juice, vinegar, onion, garlic, cumin, oregano, salt and pepper. Add pork shoulder, tossing to coat. Cover and cook on HIGH for 6 to 8 hours or until pork is very tender.
  • Using 2 forks, transfer pork to cutting board and shred. Return to slow cooker and toss with sauce. Keep warm.
  • Pulled Pork Tacos Al Pastor: Meanwhile, in medium bowl, stir onion with vinegar, salt and sugar. Let stand for 15 to 20 minutes or until lightly pickled.
  • Serve pulled pork in warm tortillas with pineapple, avocado, pickled red onion and cilantro. Serve with lime wedges and Sweet Baby Ray’s Smoked Chipotle.
