Honey Mustard Potato Salad
with Honey Mustard Dipping Sauce

- 1 pound red skin potatoes
- 1/4 of a red onion
- 1 cup cheddar, shredded
- 1/2 pound bacon, crumbled
- 1/2 cup Sweet Baby Ray's Honey Mustard Dipping Sauce
- Salt and pepper
- Scallions
Instructions
- Cut potatoes into quarters and boil.
- Cook bacon in a skillet, then cool and crumble.
- Add potatoes to the skillet.
- Dice red onion and scallions.
- Combine cooked potatoes, bacon, half of the scallions, red onion, salt and pepper into a large bowl, then add Sweet Baby Ray's Honey Mustard Dipping Sauce and mix.
- Serve potato salad in a small bowl and top with cheddar and the rest of the scallions.
